How to make the ultimate sandwich with deviled eggs

Deviled eggs are a cold and creamy treasure usually reserved for special occasions. First of all, there’s a lot of technique involved for basically a hard boiled egg, but because of that, It’s a great recipe to practice hard boiling, ice bathing, fine mesh straining, and bag piping. Nobody really loves a slippery wet hard cooked egg white, it’s the creamy yellow mush that we’re after here. Instead of sloppily spooning into a bag to be piped up, we can just smear it on as a luxurious sandwich spread, everything you need between two pieces of bread. It should pair well with any combination of meats and cheeses but I chose thick cut ham and a croissant to really push it over the line, bonus points for using your bread as a pattern for meat cutting, as you’ll seen here.
